Here in Minnesota, potluck dinners are a cultural staple. As some of you know, every Monday night at the resort we have a family potluck. All cabins are invited to come and bring a dish to share. Everyone roasts hot dogs over an open fire and gets to know each other. Last week, Mary in Cabin #3 brought "BLT Dip" to the picnic. It was so well received by all the guests that we decided to post it to our blog so everyone can enjoy it. Here goes and enjoy!
-1 8oz package of cream cheese (softened)
-1½ C sour cream
-1 envelope Ranch dip mix
-4 scallions (or green onions)
-1 lb of bacon (crumbled)
-3-4 C shredded lettuce
-2 C grape tomatoes, cut in half
-2-3 C shredded cheddar cheese
-Beat together cream cheese, sour cream, and ranch dip mix
-Spread mixture on plate or pan, cover, and refrigerate for at least 1 hour
-When done refrigerating, layer the lettuce, scallions, cheese, tomatoes, and bacon
-Serve your delicious dip!
This dip goes great with tortilla chips but could also be good with Triscuits or other types of crackers.
